SYLVIA'S ZUCCHINI CASSEROLE 
1 1/2 lb. zucchini squash
1 lb. grated Monterey Jack cheese
4 eggs
1 (7 oz.) can diced green chile
1/2 c. milk
3 tbsp. flour
2 tsp. baking powder
Prepared bread crumbs

Boil zucchini; drain. Let cool. Beat eggs, milk, flour, baking powder. Combine above ingredients with grated cheese and green chili.

Generously coat baking dish with butter and sprinkle with bread crumbs. Fold zucchini into cheese mixture and turn into baking dish. Top with bread crumbs and dot with butter. Bake at 350 degrees for 30 minutes.
