GERMAN POTATO CAKES 
4 lg. potatoes
1/2 tsp. salt
1 egg
3 tbsp. flour
Crisco

Grate potatoes; pour off water from grated potatoes, and add salt, egg, and flour. Mix well.

Drop by tablespoon into hot melted Crisco with gas on low. Potato cakes should be the size of a regular pancake. Brown completely on one side, turn and brown on the other side. Drain on paper towel.

Serve with canned fruit, applesauce, sour cream, ketchup, jelly, or whatever you enjoy. Serves 2.
