FRED'S SPAGHETTINI SAUCE 
3 lbs. lg. ripe Roma tomatoes, peeled, seeded and chopped
1 lg. bell pepper, finely chopped
3 tbsp. dried oregano
2 tbsp. dried thyme
6 cloves garlic
1 tbsp. anise seeds
1 lg. onion, chopped
1/4 c. olive oil
1/4 c. sugar
Salt and pepper to taste

Put oil in large pan and heat. Add onion, bell pepper and garlic, stir around for a few minutes. Add the tomatoes and herbs and sugar. Add salt and pepper to taste. Simmer for 2 hours.

If using Fresh Herbs increase quantity by two.
