MINI CHEESE CAKES 
2 (8 oz.) bars cream cheese
2 c. sugar
2 eggs
1 tsp. vanilla

Cream together for filling. 1 can pie filling (any flavor you like) 1 box tin foil muffin cups

Line muffin tin with foil cups. Place 1 vanilla wafer in bottom of each cup. Top with filling almost to top. Bake at 325 degrees for 25 minutes. Remove from oven, cool 20 minutes, will shrink down. Top with pie filling. Serves 24.
