MINI-CHEESE CAKES 
12 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs

Line muffin pan with foil liners. Place one vanilla wafer in each liner.

Mix cream cheese, vanilla and sugar at medium speed until well blended. Add eggs, mix well. Pour over wafers, filling about 3/4 full. Bake 25 minutes at 325 degrees. Cool. Remove from muffin pan and chill.

TOPPING:

Beat creative! Use cherry pie filling, lemon or blueberry preserves; nuts or chocolate curls. Top with Cool Whip.
