CRAB ROLLS 
1 lb. crab meat
1 1/2 c. cracker crumbs
3/4 c. celery, diced
3/4 c. onions, diced
1/4 c. green pepper, diced
1/4 c. butter, melted
1/4 c. milk
1/2 tsp. salt
1 tsp. dry mustard
1 tbsp. parsley, diced

Be sure vegetables are finely diced. Combine all ingredients and shape into small rolls about 1" thick and 3" long. Dip into beaten egg and roll in fine cracker crumbs. Deep fry until brown.

Makes 12 to 16 rolls.
