Slice 7 pounds fresh cucumbers thin. Soak in water to which 2 cups of lime have been added. LEAVE OVERNIGHT. Take out of lime water and wash in salt water. Put back in water, add 1 cup of salt and soak 4 hours. take out and soak in clear water for 2 hours. Take out of water and then put in water to which 3 tablespoons of alum have been added, bring to boil. Take out and scald in clear hot water.
Mix 1 1/2 quarts vinegar, 1 quart water, 8 pounds of sugar, 1/2 box pickling spice, green food coloring for better color, and add cucumbers. Boil 30 minutes. Pack and seal.
This makes about 7 pints. Always have just enough water to cover them each time. Happy eating!
