MRS.'S WHITE CAKE 
3/4 c. butter or Crisco
1 1/2 c. sugar
3 c. S. D. cake flour
4 level tsp. Calument baking powder
5 egg whites
1 c. milk
1 tsp. flavoring

Beat or work the Crisco with a mixing spoon until it has a whitish appearance around the edges. Then gradually add the sugar to the butter, beating the mixture meanwhile.

Sift the flour, measure and add baking powder and sift 3 times.

Beat the egg whites until very light and fluffy. Dry beaten egg white make a dry cake. Use a wire whip, which leaves the eggs moist.

To the creamed butter and sugar add alternately 1 cupful of milk, and the flour with the baking powder mixture. Now thoroughly beat the entire mixture until smooth. Add flavoring. Then fold in the egg whites. Do this carefully with a wooden spoon, so as not to break down the air cells in the beaten egg whites.

Burnt Sugar Cake: Add enough burnt sugar to above recipe to make desired color.
