ZUCCHINI CAKE OR BREAD 
3 eggs
1 c. salad oil
1 tbsp. vanilla
2 or 3 c. raw grated zucchini
1 tbsp. cinnamon
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. walnuts, chopped
2 c. sugar
3 c. flour

Beat eggs until foamy. Add sugar, oil, vanilla and zucchini. Mix well but lightly. Add dry ingredients to mixture and blend. Stir in walnuts. Pour into 9 x 13 inch greased cake pan. Bake 1 hour in 325 degree oven. Remove and cool. Frost with white or caramel icing. With bread pour into 2 loaf pans and bake. Chocolate chips added to mixture is also very good.
