BANANA CAKE OR BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed ripe bananas (or more)
1 1/4 c. sifted flour (for bread, add a little more flour)
1 tsp. baking soda
1/2 tsp. salt
2/3 c. walnuts (optional)

Cream shortening and sugar until light. Add one egg at a time, beat well after each addition. Stir in bananas. Sift together flour, soda and salt, add to banana mixture. Mix just until blended. Pour into greased 9x9x2 inch pan for cake or 2 small loaf pans for bread. Bake in moderate 350 degrees oven for 35 to 40 minutes. Cool before cutting. For 9x13 inch cake pan, double the recipe.

With an abundance if overripe bananas from work, I've been making this about once a week. I find it to be very "forgiving" and adaptable to ingredients on-hand or that I prefer. I usually use spread instead of shortening, but have also used 1/4 cup each butter and shortening. I've also used half brown sugar and half granulated. I end up with just over a cup of bananas when I use 3, so I add another quarter cup flour and a pinch more soda and also vanilla. Experiment with adding cocoa or even crushed pineapple in the place of some banana. Great simple recipe that I've passed on to others!
