BANANA CAKE OR BREAD | |
1/2 c. shortening 1 c. sugar 2 eggs 3/4 c. mashed ripe bananas (or more) 1 1/4 c. sifted flour (for bread, add a little more flour) 1 tsp. baking soda 1/2 tsp. salt 2/3 c. walnuts (optional) Cream shortening and sugar until light. Add one egg at a time, beat well after each addition. Stir in bananas. Sift together flour, soda and salt, add to banana mixture. Mix just until blended. Pour into greased 9x9x2 inch pan for cake or 2 small loaf pans for bread. Bake in moderate 350 degrees oven for 35 to 40 minutes. Cool before cutting. For 9x13 inch cake pan, double the recipe. |
