EASY GOOEY BUTTER CAKE 
1 pkg. yellow cake mix
1/2 cup (1 stick) butter
1 egg

Mix together cake mix (just the mix, not the other ingredients called for on the box) with butter and 1 egg. Pat into an ungreased 9x13-inch cake pan.

GOOEY BUTTER:

1 (8 oz.) pkg. cream cheese, softened
2 eggs
1 (1 lb.) box confectioners' sugar
1 tsp. vanilla

Cream together cream cheese, eggs, confectioners' sugar and vanilla. Pour over cake mixture. Spreading to the edges.

Bake at 350°F for 35 minutes.

This originated in St. Louis. Yes it can be made with lemon cake, however the original Gooey Butter Cake is just as is, no almond extract, no pineapple, and no pecans. I'm not saying it's wrong, it just is no longer Gooey Butter Cake. It is best with a thin crunchy layer on top of the ooey, gooey goodness that is the Gooey Butter Cake.

I was born and raised in St. Louis and when I moved to Texas a year ago Gooey Butter Cake and Imo's Pizza were the 2 things I missed the most... now I can at least get my Gooey Butter Cake fix :)

I went to Alabama for my grandpa's funeral and people from his church had brought over food. This one amazing cake didnt have a name on it so we never knew what it was. One year my brother's girlfriend brought over a "gooey butter cake" my brother ran in my room and told me it was the stuff from Alabama. We make it all the time now!!

I never had butter cake until I met my hubby 5 years ago and he LOVES IT! I found this recipe here but I decided to add 1/2 tsp of almond in addition to the vanilla to the gooey butter, Everyone who tries it loves it! Thanks for the recipe!!
