RICE PILAF 
3 tbsp. minced onion
3 tbsp. butter
1 1/2 c. chicken broth
1/8 tsp. pepper
3/4 c. raw rice
1/3 c. slivered almonds, blanched and lightly toasted

Saute onion in butter (use medium size pot) until tender. Add chicken broth, pepper and rice. Bring to a boil and simmer for 5 minutes. Stir in almonds, pepper and rice. Bring to a boil and simmer for 5 minutes. Stir in almonds. Place cover on pot, reduce heat and simmer until done, usually 20 minutes. Makes 4 to 6 servings.
