CHICKEN AND RICE PILAF 
1 1/2 c. UNCLE BEN'S® Brown Rice
1/4 c. dry onion soup mix
1 c. cream of mushroom soup
1 lb. chicken breast
1 1/2 c. boiling water
2 tbsp. chopped pimento
Melted butter
Salt
Pepper
Paprika

In a 1 1/2 quart casserole dish, combine all ingredients except chicken, butter, and seasonings. Brush chicken with butter, season with salt, pepper and paprika. Place on top of rice. Cover and bake at 375 degrees for 1 hour and 15 minutes or until chicken is tender. Serves 4 or 5.
