VEGETABLE RICE MEDLEY 
1 c. uncooked long grain rice
2 1/4 c. water
2 to 3 tbsp. onion or vegetable soup mix
1/4 tsp. salt
2 c. frozen, corn, peas, or mixed vegetables

Combine rice, water, soup mix and salt. Bring to boil. Add vegetables and return to boil. Reduce heat; cover and simmer for 15 minutes. Cook until rice and vegetables are tender.

Serves 4 - 6.
