AROMATIC RICE WITH VEGETABLES 
Fresh vegetables such as bell peppers, carrots, onions, you will need 2 c. diced
1/8 tsp. black pepper
1/4 tsp. salt
2 tbsp. olive oil or butter
1 c. white rice
2 c. chicken broth, tomato juice or water
1 tsp. dried tarragon or oregano

Dice vegetables you decide to use. Put oil or butter in microwave safe casserole dish. Add vegetables and cook on High 2 minutes. Add rice, broth, oregano, salt and pepper. Stir slightly. Cook uncovered on High 2 minutes, cover and cook 50% power for 25 to 27 minutes. Let sit 5 minutes and stir with a fork.

Since microwave ovens vary in power, you may need to adjust your cooking time.
