BRAN MUFFINS 
1 (15 oz.) box raisin bran cereal
1 c. chopped nuts (optional)
5 c. flour
3 c. sugar
5 tsp. baking soda
2 tsp. salt
1 c. extra raisins
1 tsp. cinnamon

Mix all above in large bowl. Mix together

1 qt. buttermilk
1 c. oil
4 slightly beaten eggs

Add to dry ingredients. Mix well by hand (not electric mixer). Cover and store in refrigerator. Batter keeps for 6 weeks. Bake as you need them. Put in paper cups in cupcake pan and bake at 400 degrees for 20 to 25 minutes. Makes 4 to 5 dozen.
