GRAMMA RITCHEY'S PUMPKIN COOKIES 
1 c. sugar
1 c. shortening
1 c. cooked pumpkin
1 tsp. baking soda
2 tsp. baking powder
2 1/4 c. flour
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
raisins or nuts (if desired)

Cream sugar and shortening; add pumpkin to which baking soda has been added. Add dry ingredients which have been sifted together. Stir in vanilla, nuts and raisins. Drop by spoonful onto greased cookie sheet and spread thin (use glass with a cloth stretched over the bottom and held in place with a rubber band). Dip glass into cold water before pushing on dough.

Bake at 375°F for 12 minutes. Remove to cooling rack.
