FRENCH STRAWBERRY FLAN 
1 1/2 c. all-purpose flour
Pinch of salt
1/4 c. butter
1/2 c. sugar
2 egg yolks
Few drops of vanilla extract

FILLING:

1/2 c. cream cheese
1/3 c. sugar
2 tsp. grated orange rind
1 tbsp. orange juice
1 tbsp. light cream
1/2 lb. strawberries

GLAZE:

1/2 c. red currant jelly
1 tbsp. water
2 tsp. Grand Marnier or orange juice

To make crust: Sift flour and salt together. Make a well in the center. Place the remaining ingredients in the well and work to a smooth paste. Gradually draw the flour into the paste and knead lightly to form dough. Chill for at least 1 hour before rolling out. Place dough in a 9 inch pie pan. Prick the dough all over with a fork. Preheat oven to 400 degrees. Bake for 15-20 minutes or until the sides are crisp and set. Cool.

To prepare filling: Cream the cheese well with the sugar. Blend in the orange rind, juice, and cream. Spoon into the pastry shell. Hull and wash the strawberries. Pat dry and arrange on the top.

To prepare glaze: Stir all the ingredients for the glaze together over a gentle heat. Cool a little, stirring and spoon over the strawberries.
