PARMESAN CHICKEN BITES 
About 1 lb. boneless, skinless chicken breasts (or breast tenders)
1/2 c. seasoned bread crumbs
1/2 c. grated Parmesan cheese
2 tbsp. parsley
1/3 c. melted butter

Cut chicken breasts into chunks about 1" in size. Wash and pat dry with paper towel. Combine bread crumbs, Parmesan cheese and parsley. Dip chicken chunks first in butter and then into the bread crumb mixture. Place in single layer in foil lined baking pan. Bake in 400 degree oven for 15 minutes. Serve with rice or potatoes or over buttered noodles.
