LOW - FAT OVEN - FRIED CHICKEN

1 tbsp. skimmed milk
1 lb. boneless, skinless chicken breasts, split & cut into 1" chunks
1/2 c. cornflake crumbs
2 tsp. paprika
1/2 tsp. salt
Dash of pepper

1. Preheat oven to 400 degrees.

2. Pour milk into medium bowl.

3. Add chicken chunks to milk. Toss to coat well.

4. In clean plastic bag, combine corn flake crumbs, paprika, salt and pepper.

5. Place half of the chicken chunks in the plastic bag. Close the bag and shake to coat chicken well.

6. Remove chicken chunks from the bag, shaking off excess crumbs. Place on large baking pan sprayed with non-stick vegetable cooking spray.

7. Repeat with remaining chicken chunks.

8. Bake 15 minutes until chicken is golden brown and cooked through.

9. Serve with barbecue sauce. Yield: Serves 4.
