PUMPKIN GEMS 
CAKE:

1 yellow cake mix
3 eggs
1/2 c. oil
1 tsp. baking soda
2 tsp. cinnamon
20 oz. can pumpkin

CREAM CHEESE FROSTING:

3 oz. cream cheese
3/4 c. butter
1/2 tsp. vanilla
1 tbsp. milk
2 c. powdered sugar

CAKE: Blend together all ingredients. Fill paper-lined mini-muffin pans 2/3 full. Bake at 350 degrees for 15 minutes. Cool, then frost with Cream Cheese Frosting. Makes about 100 miniature cupcakes.

CREAM CHEESE FROSTING: Cream together butter and cream cheese. Beat in vanilla and milk. Gradually add powdered sugar until frosting is desired consistency.
