COLORADO HARVEST 
1 pumpkin
3 yams
3 apples, peeled, cored, and chopped up
2 c. brown sugar
1 tsp. cinnamon
1 tsp. nutmeg
3 tsp. vanilla
1 c. pecans or walnuts
1 c. orange juice
1 cube butter

Pick out a nice plump pumpkin that will sit up nicely, before November. Cut off top of pumpkin and remove seeds and strings.

Boil yam just until they hold their shape. Mix ingredients and pour into pumpkin. Cover with top. Bake at 350 degrees until pumpkin is tender but still holds its shape.

Top with marshmallows and return to oven until melted. Serve in pumpkin.
