COMPANY CASSEROLE 
2 c. diced turkey or chicken (or)
1/2 pkg. crabmeat and 1 lb. diced shrimp
1 c. diced celery
1/2 c. diced onion
1 can mushroom soup (undiluted)
3 hard boiled eggs (sliced)
2 tbsp. lemon juice
1/2 c. mayonnaise

Mix together soup, lemon juice and mayonnaise and set aside.

Combine meat or seafood, celery and onion, then add the soup mixture. Gently stir in the hard boiled egg slices. Pour into a casserole dish and cover with crushed potato chips or cracker crumbs.

May be made ahead and refrigerated until dinner time. Then bake for 40-45 minutes at 350 degrees. Serve over rice or noodles.
