OATMEAL FRUIT BAR COOKIES 
1 c. quick cooking rolled oats
1 c. flour
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla
1/2 c. sugar or 1/4 c. sugar & sugar substitute equivalent for 1/4 c. sugar, suitable for baking
1/2 c. shortening
2 c. drained water packed fruit, your choice, in can, reserve juice
2 tbsp. reserved juice

Mix all ingredients except fruit and juice until mixture becomes coarse crumbs. Add the fruit juice to hold crumbs together. Press 1/2 of the crumb mixture into 8 x 8 inch square pan. Top with chopped or mashed fruit. Pat on the remaining crumbs. Bake at 375 degrees for 30 minutes. Cut into bars when cool.
