BAKED ZUCCHINI 
2 zucchini
1 onion, chopped
1 tbsp. butter
4 tbsp. grated Parmesan cheese
1 tbsp. bread crumbs
Black pepper & salt to taste

Cut zucchini in half lengthwise. Scoop squash from center and chop. Saute onion in butter. Add chopped squash, stirring until heated through. Season to taste. Fill squash shell. Combine cheese and bread crumbs and sprinkle on top. Arrange in single layer on baking sheet. Bake at 350 degrees for 15 minutes. Serves 4.
