BAKED ZUCCHINI 
2 med. zucchini
8 oz. can of stewed tomatoes, drained
Parmesan cheese
Flavored bread crumbs

Slice squash lengthwise into 4 to 6 pieces depending on size of squash. Roll each piece in bread crumbs to coat. Place in baking dish. Top with potatoes. Sprinkle with cheese and dot with butter. Bake at 350 degrees for 30 minutes or until zucchini is fork tender.
