ZUCCHINI - SAUSAGE BAKE 
1 lb. mild Italian sausage
1 lg. onion, chopped
1 red bell pepper, chopped
1 can (14 oz.) tomatoes
3/4 lb. zucchini, sliced
1/2 tsp. dry oregano leaves
1 c. beef broth, reg. strength
1/2 c. long grain white rice
1/2 c. grated Parmesan cheese

Fry sausage in frying pan until lightly browned, 8-10 minutes. Lift out sausage and set aside; drain off all but 2 tablespoons fat. To the pan add onion and bell pepper, stir often; brown the vegetables then add tomatoes and their liquid; break up with spoon. Add zucchini, oregano and broth. Simmer 5-10 minutes, then add rice.

Pour into shallow baking dish, sprinkle with sausage. Cover tightly. Bake in a 350 degree oven until rice is tender, 50-55 minutes. Sprinkle with cheese.
