STUFFED BAKED ZUCCHINI 
3 small or 1 large zucchini
2 tbsp. butter
1/4 c. onion, chopped
1/2 c. celery, chopped
1 c. ground beef or lamb
1 slice bread, cubed
1 (8 oz.) can tomato sauce
Parmesan cheese

Pre-boil zucchini - 3 minutes for small or longer for large. Cut in half length-wise. Remove pulp (set aside) and sprinkle shell with salt and pepper. Melt butter in fry pan. Add celery, onions and meat to butter and cook until brown. Add bread cubes, pulp of zucchini and tomato sauce. Stuff into zucchini shells and sprinkle with Parmesan cheese.

Bake in shallow pan in 375°F oven for 25 minutes or until done.
