BAKED ZUCCHINI 
2 zucchini
1 egg
1/4 c. fine bread crumbs or cracker crumbs
Crumbled bacon, chopped ham, grated cheese, finely minced onion
Salt & pepper
Parmesan cheese

Steam zucchini until fairly soft when jabbed, approximately 15 minutes. Slice thin layer off top. Beat egg, add bread or cracker crumbs and other ingredients in a bowl. Scrape out inside of zucchini with spoon, chop up and add to egg mixture. Sprinkle shell with Parmesan cheese, spoon in mixture, sprinkle with Parmesan cheese. Bake at 375 degrees for 25 minutes.
