LEMON SQUARES | |
1 c. and 2 tbsp. flour 1/4 c. and 2 tbsp. powdered sugar 1/2 c. butter, softened and cut into small pieces 2 eggs 1 cup sugar 1/3 c. lemon juice Mix 1 cup flour and 1/4 cup powdered sugar; add butter and work with hands to form dough. Flour fingers and pat down dough in bottom of 8 inch square pan. Bake on preheated 350 degree oven for 15 to 20 minutes until firm to the touch. While this is baking, beat eggs slightly; stir in sugar; add 2 tablespoon flour till blended then add lemon juice. Pour into warm, prebaked crust. Bake 20 to 25 minutes longer till topping is set and golden. Place pan on rack, sprinkle top with 2 tablespoons sifted powdered sugar. Cut into squares when cool. |
