EMILY'S LEMON SQUARES 
3/4 c. butter
1/2 c. confectioners' sugar
1 1/2 c. flour
3 eggs
1 lemon
1 1/2 c. sugar

Preheat oven to 350 degrees. Mix butter, confectioners' sugar and flour until crumbly. Pat into a 9x12 inch pan and bake 20 minutes.

Beat 3 eggs slightly, add 1 1/2 cups sugar, 3 tablespoons flour, and the juice of 1 lemon. Pour this filling over hot baked crust and bake for another 30 minutes. While hot, loosen edges with knife, then sprinkle with confectioners' sugar. Cut when cool.
