NEIMAN - MARCUS LEMON SQUARES 
1 c. flour
1 stick (1/2 c.) butter
2 eggs, beaten until light
3/4 c. sugar
5 tbsp. lemon juice, grated rind of 2 lemons
2 tbsp. flour
1/2 tsp. baking powder
Powdered sugar

Mix 1 cup flour and butter until it is like fine meal and pat into buttered 8 inch square pan. Bake at 350 degrees for 15-20 minutes just until light brown. To beaten eggs, add sugar, lemon juice, and lemon rind; beat for 4 minutes. Stir in 2 tablespoons flour and baking powder until dissolved. Pour over top of baked crust and bake again at 350 degrees for another 20 minutes. Dust top with powdered sugar and cut into squares when cool.

This recipe can be doubled and baked in 9 x 13 inch pan.
