ZUCCHINI & TOMATOES 
1 lb. zucchini
2 tsp. butter
1/2 c. chopped onion
1 (16 oz. 4 oz.) can tomatoes
1/8 tsp. BLAIR oregano
Pinch of basil
1/4 tsp. salt
1/4 tsp. BLAIR black pepper
1/3 c. grated cheddar cheese
1/4 tsp. BLAIR garlic powder

Wash and cut zucchini in 1/2 inch pieces and saute in butter, add onions and garlic. Cook 10 minutes until tender; add tomatoes, basil, oregano, salt and pepper; simmer for 15 minutes until sauce cooks down. Add cheese just before serving. Yields: 4 servings.
