ZUCCHINI AND TOMATO CASSEROLE 
1 lg. zucchini, cut into small pieces
3 tbsp. butter
3 tbsp. flour
3 lg. tomatoes, peeled and chopped (2 c. canned tomatoes)
1 green pepper, chopped (optional)
1 sm. chopped onion
Cracker crumbs
Grated cheese for topping

Boil zucchini until tender and set aside. Melt butter and blend in flour; then add tomatoes, green pepper and onion. Season and simmer 5 minutes. Place zucchini in well - buttered casserole dish. Pour tomato mixture over zucchini, lightly cover with cracker crumbs and dot with cheese. Bake at 350 degrees for 30 minutes.
