ZUCCHINI AND TOMATO CASSEROLE 
12 med. washed and sliced crosswise zucchini
3 lg. tomatoes, peeled and sliced
1 lg. sweet onion, sliced
1 1/2 c. cracker crumbs
1 c. grated sharp cheese
Salt and pepper
1 stick butter
1 tbsp. brown sugar
1 can tomato paste, diluted

Alternate zucchini, tomatoes, and onions in a buttered casserole, sprinkle each layer with crumbs, cheese, salt, and pepper and dotting with bits of butter. Sprinkle brown sugar over tomatoes. The top layer should be cheese. Pour tomato paste over all before cheese is last layer. Bake at 350 degrees for 1 hour and 15 minutes.
