ZUCCHINI-TOMATO CASSEROLE 
6 med. zucchini (6 inch long, sliced crosswise)
1 1/2 c. cracker crumbs (saltines)
1 stick butter, melted over top
Salt and pepper to taste
6 med. tomatoes, sliced
1 lg. sweet onion
1 c. grated sharp cheese on top
1 tbsp. brown sugar

Alternate vegetables in layers in buttered casserole - zucchini, tomatoes, onions; repeat. Layer top of dish as it will settle as it cooks. Sprinkle brown sugar over top layer, then crumbs, then cheese. Cover. Bake 350 degrees 1 hour. Makes 6-8 servings.
