TOMATO - ZUCCHINI SCALLOP | |
2 sm. zucchini, sliced 2 sm. tomatoes, peeled & diced 1 med. onion 1 c. plain croutons 3 tsp. salt Dash of pepper 1 med. tomato, cut in wedges 1 c. (4 oz.) cheddar cheese, shredded Place half of zucchini slices in 1 1/2 quart casserole. Top with half of diced tomatoes, onion, croutons, salt and pepper. Repeat layers once. Top with tomato wedges. Cover. Bake at 350 degrees for 1 hour. Remove cover and sprinkle with cheese. Bake 5 minutes or until cheese melts. |
