SCALLOPED TOMATOES 
1/3 c. butter, melted
1 tsp. salt
6 tbsp. brown sugar
1 lb. can or 1 pt. tomatoes (can use 2 great big fresh tomatoes, peeled & diced)
3 slices stale bread

Break stale bread into coarse pieces to make 1 1/2 cups. Place in 9 inch heat-proof dish. Pour melted butter over bread. Stir until well coated. Meanwhile in saucepan, combine salt, sugar and tomatoes. Heat to boiling point. Pour over bread. Stir to distribute bread in tomatoes. Bake at 425 degrees for 30 minutes or until well browned. (Can add a few cracker crumbs on top for looks and taste, if desired.) Serves 4 people. Can half or double recipe as desired.
