SCALLOPED TOMATO CASSEROLE 
3 1/2 c. peeled, chopped tomatoes or canned, drained
1 c. chopped onion
1/2 c. cheese flavored cracker crumbs
1 1/2 tsp. sugar
1/2 tsp. salt
1 (8 oz.) sour cream
1 1/2 c. seasoned croutons
1 tbsp. melted butter

Layer half each of tomatoes, onions, cracker crumbs, sugar and salt in greased 1 1/2 quart casserole. Repeat layers. Bake at 325 degrees for 20 minutes. Spread sour cream on top. Sprinkle croutons over sour cream. Drizzle melted butter over croutons. Bake additional 10 minutes. Yield: 6 servings. Double or triple for a crowd. So quick and always gets good comments.
