SCALLOP CASSEROLE 
2 tbsp. butter
Salt and pepper to taste
1/2-3/4 c. bread crumbs
1 c. shredded Cheddar cheese
3 tbsp. sherry (optional)
1 lb. scallops
1/2 c. light cream or evaporated milk

Melt butter in frying pan. Add salt, pepper, crumbs, cheese and sherry. Mix with scallops or place scallops in buttered baking dish. Pour cream and other mixture over it. Bake 30-35 minutes in 350 degree oven.
