FRUITCAKE BARS | |
1 (6 oz.) can frozen concentrated orange juice, thawed (undiluted) 1/2 c. and 2/3 c. packed light brown sugar 1 c. raisins 1 (8 oz.) pkg. dates, chopped 1 lb. mixed candied fruit, finely chopped 1/2 c. soft butter 4 eggs 1 c. unsifted flour 1/8 tsp. baking soda 1/2 tsp. each cinnamon and nutmeg 1/4 tsp. each allspice and cloves 1 c. chopped nuts In medium saucepan combine orange juice and 1/2 cup brown sugar. Stir over low heat until it boils. Add dates and raisins. Bring to a boil again; remove from fire, stir in candied fruit and set aside. Cream butter and 2/3 cup brown sugar. Beat in eggs, one at a time. Blend in flour mixed with soda and spices. Stir in nuts and fruit mixture. Turn into 2 waxed-paper lined 15 x 10 x 1 inch pans. Bake in 300 degree oven for 35-40 minutes - cool - frost with orange glaze - cut into 3 x 1 inch bars. GLAZE: 1 1/2 cups confectioners sugar, sifted; 1/4 cup orange juice; 1 tablespoon soft butter. |
