FRUIT CAKE BARS 
1 lb. candied fruit mix
1/2 lb. raisins
1 c. shortening
2 1/4 c. sugar
2 eggs, beaten
1 tsp. baking soda
6 c. sifted flour
1/2 tbsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1/2 c. molasses
1/2 c. water

Grind candied fruit mix and raisins; set aside. Cream shortening and sugar; add beaten eggs, soda and ground fruit; mix well. Sift flour and salt and spices; add to creamed mixture alternately with molasses and water.

Divide dough into portions the size of baseballs. Roll each ball into a rope as big around as a 50 cent piece. Lay ropes on cookie sheet and press flat with fingers until about 2 inches wide. Brush strips with mixture of 1 egg blended with 1 tablespoon water.

Bake at 350 degrees for about 20 minutes, or until done. Remove from pan; cool on racks or clean brown paper. Cut in bars and store in tightly covered containers; will keep up to 6 months. Yield 7 dozen bars. Perfect for mailing.

Delicious ! Soft, spicy/fruity bar cookie that is easy to make, store, and eat. I ground the fruits in the food processor. Finished with powdered sugar glaze after bars were cool. Would probably be very good with a liqueur glaze, too. These keep well and taste like a fancy imported treat I've purchased from the store. Will definitely add this to my holiday recipe collection.
