QUAKER FRUIT AND OAT BARS 
2 c. Quaker oats (quick or old-fashioned, uncooked)
1 c. all-purpose flour
3/4 c. butter, melted
1/3 c. firmly packed brown sugar
1/3 c. chopped nuts
1/2 tsp. salt (optional)
1/2 tsp. baking soda
1 (10-12 oz.) jar favorite fruit preserves

Heat oven to 350 degrees. Grease 7x11 inch glass baking dish. Combine all ingredients except the preserves; mix well. Reserve 3/4 cup oats mixture, press remaining mixture into bottom of prepared dish. Bake 10 minutes.

Spread preserves evenly over partially baked base to within 1/2 inch of the edge of pan; sprinkle with reserved oat mixture. Bake 20-22 minutes or until golden brown. Cool; cut into bars. Store tightly covered at room temperature.

I have made these twice, once with strawberry preserves and once with blackberry seedless jam. Both were so GOOD!! I will be entering a bake off contest at work with these bars. I have let two of my co-workers taste them and they both think I'll win. And they are SO easy to make!! Sure beats the cereal bars out of the grocery store and they are better for you too. I used sugarless preserves and jam and I used Smart Balance butter because it's better for you and it's really good!!!!

I'll be using this recipe a lot!!! Thanks
