ZUCCHINI CASSEROLE 
3 tomatoes
2 or 3 lg. zucchinis
3 cloves of garlic
1/2 c. chopped onion
1/2 stick butter
Basil to taste (about 1 tablespoons)
Salt and pepper to taste
3/4 to 1 c. shredded cheese: eg: Monterey Jack
1 c. bread crumbs

Saute garlic, onion and butter until onions are transparent. Add zucchini (thinly sliced), tomatoes (diced) and all of remaining ingredients, except for cheese and bread crumbs.

Saute covered, until everything is soft for about 15 to 20 minutes. Add 1/2 cup to 3/4 cup bread crumbs and all cheese. Mix together until cheese melts. Pour in casserole, add extra cheese on top. Bake at 375 degrees for 20 to 30 minutes.
