OATMEAL CRANBERRY MUFFINS 
1 1/2 c. all-purpose flour
1 tbsp. baking powder
3/4 tsp. salt
1/2 c. walnuts, finely chopped
1/2 c. dried cranberries or dried pitted cherries or raisins
3/4 c. old fashioned oats
3 tbsp. butter, softened
3/4 c. firmly packed light brown sugar
3/4 c. milk
1 egg

1. Preheat oven to 350 degrees. Grease 16 muffin pan cups or loaf pan (8 1/2 x 4 1/2 inch).

2. Whisk together flour, baking powder and salt in large bowl. Toss nuts and cranberries with 1 teaspoon of flour mixture in small bowl. Set aside. Stir oats into remaining flour mixture.

3. Beat together butter, sugar, milk and egg in a bowl until blended. Add to flour mixture, stirring just until evenly moistened. Fold in nut-cranberry mixture. Turn into greased muffin pan cups or loaf pan.

4. Bake in preheated oven for 20 minutes for 16 muffins or 50 minutes for loaf, or until wooden pick inserted comes out clean. Cool muffins on wire rack for 5 minutes. Loaf for 10 minutes.

First, I only got 11 small muffins from this recipe. I changed it up and mine came out delicious. I boiled up 1 cup fresh cranberries and used those plus the juice from them with a little added cranberry juice cocktail. In my oven, they only took 15 minutes. Also, I used 1 cup white flour and 1/2 cup whole wheat flour for added fiber. I'll make these my way again!! Yummy!

Made the noted volume - I made a dozen regular muffins and about 8-10 mini muffins.
I also found that they were ready before 20 minutes were up, so keep an eye on them. I made them without muffin papers, and they had a nice edge reminiscent of oatmeal cookies. I did add some vanilla to the recipe.
