PRIZE WINNING MEAT LOAF 
1 1/2 lb. lean ground beef
1 c. tomato juice
3/4 c. oats (quick or old fashioned, uncooked)
1 egg or 2 egg whites, slightly beaten
1/4 c. chopped onion
1/2 tsp. salt (optional)
1/4 tsp. black pepper

Heat oven to 350 degrees. Combine all ingredients; mix lightly but thoroughly. Press into 8x4 inch loaf pan. Bake 1 hour. Drain, let stand 5 minutes. Makes 8 servings.
