2 Hawaiian papayas, peeled, halved & seeded 1 tbsp. cornstarch 1 lb. cream cheese, softened 1/2 c. sugar 3 eggs 1 tsp. grated lemon peel 1 (9") baked pastry crust 1/2 c. melted apple jelly Kiwi slices Mint sprigs Puree one papaya half in blender to make 1/2 cup (turn motor on and off and scrape sides of container as needed). Combine puree with cornstarch, set aside in mixing bowl. Beat cream cheese with sugar and blend well. Mix in eggs and peel, then stir in reserved papaya puree. Pour into crust. Bake in 375 degree oven 25 to 30 minutes until just set. Cool. Top with remaining papayas, thinly sliced. Brush with melted jelly to glaze. Garnish with Kiwi slices and mint. Makes 6 to 8 servings. |
