GREEN TOMATO MINCEMEAT 
1/2 gallon apples, cored and peeled
4 c. raisins
1/2 lb. suet
8 c. sugar
4 c. vinegar
1 tbsp. cinnamon
1 tbsp. cloves
1 tbsp. salt

Mix first 3 ingredients, then add remaining ingredients. Put enough green tomatoes through food chopped to make a gallon (medium holes); drain. Sprinkle a little salt over them and let stand overnight; drain in the morning.

Then add above ingredients and cook over medium heat until well cooked. Put into jars or use as any other mince meat.
