GREEN TOMATO MINCEMEAT | |
1 gal. chopped green tomatoes 1 tbsp. salt 1 orange 3 c. brown sugar 2 c. raisins 1 c. cider 2 c. chopped apples or pears 2 tsp. cinnamon 1 tsp. cloves 1/2 tsp. ginger 1 tsp. nutmeg Sprinkle chopped tomatoes with salt. Let stand 1 hour; drain. Add grated rind and chopped orange pulp. Mix all ingredients and cook until thick. Pour while hot into jars and process in a boiling water bath 20 minutes or freeze. |
