CHIP'S FAMILY FAVORITE SPAGHETTI SAUCE | |
It's cheap and good. Raised a family on this. Ate it at least once a week for years. Still do! SAUCE: 2 to 3 cups oil (any will do) 4 cloves garlic, chopped 2 (15 oz.) cans diced tomatoes (Hunts) 1 to 2 handfuls sweet basil 1/4 handful fennel seed 1/2 (8 oz.) can tomato paste Put oil in frying pan and chop garlic and add it. Put on low heat. All your trying to do here is flavor the oil. Make sure you don't burn the garlic. Just as it gets some color add the tomatoes, sweet basil and fennel seed. Cover and put on low heat and simmer for about 15 to 20 minutes. While your doing this start your choice pasta. As soon as the the pasta is ready add some tomato paste to the sauce and thicken it up to what you want. I usually use about a 1/2 can of the paste. Drain your pasta, add to the sauce, toss it and eat! Takes about a 1/2 hour and you can serve 4 with this. But you can cook and serve 5 to 25 people in a 1/2 hour just by multiplying this recipe.
